The tutorials listed by the others are good. But if you're limited to just one monitor (as I am) you may prefer written tutorials, so that you don't have to keep switching your screen view. Photoshop takes up a lot of real estate just by itself. My favorite Photoshop authors are Deke McClelland and Scott Kelby. You might want to check out their Photoshop help books.
